Superpowers Salad with Seaweed.

A vibrant and highly nutritious salad with an array of colours, flavours and textures that is highly versatile. Serve as a main dish as it is, or as a side dish. Substitute the broad beans with chickpeas and add some humus on top. Or some tofu or organic chicken and a small handful of cashew nuts. The possibilities are infinite.

The dressing with dulse is so delicious and can be stored in a mason jar in the fridge. Use to top roast vegetables or risotto. Substitute the dulse for your favourite sea vegetable of choice.

  • A mixture organic green leaves

  • Long stem broccoli or fine green beans

  • Broad beans

  • Edible flowers and herbs

  • Sprouts of choice - I love sunflower and pea sprouts

  • 200g quinoa


  • 1 tbsp Dulse

  • 2 tbsp pumpkin seeds

  • 2 tbsp sunflower seeds

  • 2 tbsp hemp hearts

  • 1 tbsp black sesame seeds

  • Splash of coconut aminos


  • 1 tbsp Dulse

  • Sesame oil

  • Olive oil

  • Apple cider vinegar

  • Juice of 1/2 an orange or lemon

  • 1 tsp mustard

  • 1 garlic clove, crushed

  • Pink Himalayan salt

  • 1/4 tsp Blue Majik


  1. Cook the quinoa following the packet instructions. Allow to cool.

  2. Steam and blanch the broad beans and broccoli or other vegetables.

  3. Make the seed topping by toasting the seeds gently with the prepared seaweed in a dry frying pan for a few minutes. When the seeds start to pop, add the coconut aminos and stir over until the seeds have soaked it up. Allow to cool.

  4. Carefully combine the ingredients for the dressing with balances the liquids, to taste.

  5. Wash and dry the organic salad leaves, shoots, flowers and sprouts carefully.

  6. Arrange all the ingredients together in a large flat bowl, drizzle with dressing and sprinkle with toasted seed mix.
